We purchase the duck, cure, slice, pack, deliver all of our products ourselves as a team of 2, here in Brooklyn! 

What does “cured” mean?

Curing is the process of preserving meat by rubbing it with a mixture of salt and spices. Over 1 to 4 weeks, this mixture—known as the "cure"—penetrates the meat, drawing out moisture and creating an environment that prevents bacterial growth. Once the meat is fully cured, it becomes safe to hang and dry in a temperature and humidity controlled refrigerator for about 1 month. The cured meat develops a firmer texture and takes on a vibrant, reddish hue.

How do I store my meats?

Our products are shelf stable at room temperature, however for best quality, store in your refrigerator between 33F and 40F.

How long will everything keep once opened?

Once opened, it can stay fresh for up to a month if properly stored. To maintain quality, wrap it tightly in plastic wrap, place in a zip bag, or use butcher/wax paper to minimize oxygen exposure. Cured meats have been crafted for centuries without refrigeration, and as long as they're protected from oxygen, light, and extreme heat, they are made to last.

Products are vacuum sealed in and sent via FedEx or USPS in recyclable packaging.

I live in another state, how can I get your product?

We only ship to the New York tri-state area, but sometimes bring batches when we travel. Stay connected with us on Instagram to hear first if we are bring Poco Pato to your state.

Do you do events or pop-ups?

Yes! We love to collaborate with chefs, pop-ups, dinner parties, restaurants, wine shops, or special events. 

Do you do cater?

Yes! We cater a select amount of events a year. Reach out to us to see if we can collaborate.

I’m a winery, restaurant or small grocery store, how do I carry Poco Pato?

We do not wholesale at the moment, but are open to doing events with you.

I live in NYC - is there anywhere I pick up instead of shipping?

Yes! We offer pick up in Brooklyn, email (pocopatobk@gmail.com) or DM on Instagram to arrange a pick up.

- NYC 3-4 Day Delivery ($3)
- Tri-State area 2 Day Delivery ($10)
